when plain ice cream just isn't enough

For these scrumptious ice cream sandwiches, you'll need:

1 cup peanut butter
1/2 cup sugar
1 egg
vanilla ice cream (or your favourite ice cream)
chocolate chips

Peanut Butter Cookies:
This recipe is taken from http://www.bakerella.com/. They have a lot of great recipes so do visit!
1. Mix the peanut butter, sugar, and egg until well blended (yes, no flour required!!)
2. Refrigerate batter for 30 minutes.
3. Remove from fridge and preheat oven to 325F.
4. Roll mixture into 18 balls and place on ungreased cookie sheet 2 inches apart.
5. Flatten each ball by using a fork to make a criss-cross pattern.
6. Bake for 18-20 minutes or until lightly browned.
7. Let them cool for 20-30 minutes before proceeding with the rest of the recipe (or else they’ll melt the ice cream!)

Ice Cream Sandwiches:
Simply scoop some ice cream on a cookie, then place another cookie on top and press gently to spread the ice cream to the edge.
Place some chocolate chips into the blender so they’ll finely chopped.
Roll the sides of the ice cream sandwich into the chocolate chips.
